How We Celebrate National Popcorn Day

Before National Popcorn Day comes to a close, I would be remiss if I didn’t tell you how we celebrate the day in our house. My son is actually allergic to corn, and yes, corn is in everything.

When he was young, he was always sick with respiratory issues. He was always congested and coughing. When he started needing breathing treatments we began to look for better answers.

We discovered his corn allergy when he was about 2 1/2, and since then we have been an almost all allergen friendly household. Corn was just one of the many other allergies he had back then.

Things are better now. We are used to eating corn-lite, because it is almost impossible to be completely corn free. And I feel like he is becoming less sensitive to it.

So on National Popcorn Day instead of popcorn, we eat popped sorghum. I have popped my own and I have also bought it already made in individual bags. The kernels are much smaller than popcorn, but the taste and texture are very good. The bonus is that it is very good for you.

If you choose to pop your own sorghum, make sure to watch the video available from Tru-POP. It is so helpful and really easy to do. Sometimes the individual bags are hard to find on Amazon.

Below is the recipe for something fun we make with our popped sorghum. We call them “Star Bars” because I use a star shaped cookie cutter to shape them. You can actually use any cookie cutter of choice. And you can also make these with POPCORN!!

I hope that you enjoyed National Popcorn Day. I actually love popcorn so much. When I used to eat it, my favorite thing to do was dip each individual kernel in ketchup. I can totally see the look on your face right now, but next time you eat popcorn just try it. You have to taste it for yourself.

National Popcorn Day

Star Bars

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Course Sweet Treats
Servings 6 Star Bars

Ingredients
  

  • 2 1 oz bag Popped sorghum or popcorn
  • 2 cups Gluten free marshmallows I use Dandies brand
  • 2 tbsp Butter I use Earth Balance to make them dairy free
  • 1 tsp Vanilla extract
  • 2-4 tbsp Gluten free fruity cereal of choice I use Love Grown Sea Stars

Instructions
 

  • Cover a cookie sheet with a piece of parchment paper and set aside. Place star-shaped cookie cutter on tray so it is ready for use.
  • In small saucepan, melt butter
  • Add marshmallows and stir until melted
  • Add vanilla
  • Add sorghum and cereal and remove from heat
  • Stir with spatula until marshmallow and sorghum are well blended together
  • With cookie cutter on parchment paper, scoop some of the mix into the cookie cutter and with fingertips press it into all the spaces. Lift the cookie cutter and the mix should take it's shape.
  • Continue until you have used all the mix, you can also roll this mix into balls if you prefer.
  • Let cool and enjoy!
