Gluten Free Biscuits

Some of the things I missed most when I became gluten free were the breads, muffins and biscuits. Thankfully I don’t miss them anymore, but I think this was a big hurdle for me. I have always loved to cook, but I have never been a huge baker. That’s why these easy gluten free biscuits have been such an answered prayer.

Do you crave the taste of a warm breakfast biscuit? Do you dread the work involved in baking them. Well I am here to tell you, look no further.

In my last post of Paola’s Pantry (that’s my pantry) I wrote about how I love making easy pancakes with Gluten Free Bisquick. I was thrilled to discover that this one mix can also yield some of the very best gluten free biscuits around.

Gluten Free Biscuits

 

To some I know this information may not be revolutionary because there is a biscuit recipe on the back of the box. However, given our other allergies, I had to make a couple of changes to the existing recipe and the results are so delicious.

After the first time I made these, they have become a weekly staple in my home.

The recipe on the back of the box calls for the following:

  • 2 cups of GF Bisquick
  • 2/3 cup of milk
  • 1/3 cup of shortening
  • 3 eggs

This is the recipe I created since we are also dairy and egg free. We love it!

While I preheat my oven to 400 degrees, I mix this batter in my KitchenAid stand mixer.  I then take a paper towel with a little spectrum shortening and pretreat a muffin top pan. Next, I put tablespoonfuls of batter in each shallow circle, filling all 12. Once the oven is preheated, I bake the biscuits for 13 minutes.

**It is very important to let these biscuits cool completely before removing them from the pan.

These biscuits were a huge win for everyone in our family. My son absolutely loves them loaded with Applegate Bacon.

My Mommysaving tip

I am all about saving mom some time. Although these biscuits do not take a long time to make it’s always nice when you can make them ahead and freeze them. This is exactly what I do! I will make a batch of 12 biscuits and freeze what we do not eat in a zip lock bag to enjoy throughout the week.
